Banana & walnut loaf | LEBANESE RECIPES

A banana loaf is an effective way to make use of up overripe bananas – add some crunch with the addition of walnuts.

Directions

1. Preheat the oven to 190°C, fan 170°C, fuel mark 5. Mist a 450g loaf tin with cooking spray and line with baking paper.

2. Sift the flour and cinnamon into a big bowl and stir within the walnuts.

3. Whisk the eggs in a jug. Add the maple syrup and mashed bananas and whisk once more to mix.

4. Pour the moist elements into the flour combination and gently fold collectively, taking care to not overwork it.

5. Spoon the combination into the ready loaf tin. Prepare the sliced banana, cut-side up, on high and bake for 40 minutes, till a skewer inserted into the centre comes out clear.
